Classic buttery shortbread cookies that are tender, melt-in-your-mouth, and made with just a few simple ingredients. Perfect for everyday treats, holidays, or gifting.

Ingredients

1 cup (2 sticks) unsalted butter, softened to room temperature

1/2 cup powdered sugar

2 cups all-purpose flour, sifted

1/4 cup cornstarch (optional, for extra tenderness)

1 teaspoon vanilla extract (optional)

1/4 teaspoon fine salt (omit if using salted butter)

2 tablespoons granulated sugar, for sprinkling (optional)

1 teaspoon almond extract (optional variation)

2 tablespoons brown sugar (optional variation)

Zest of 1 lemon (optional variation)

Instructions

  1. Cream the softened butter and powdered sugar together until pale, light, and fluffy.
  2. Add vanilla extract and salt if using, and mix until combined.
  3. Gently add the sifted flour and cornstarch (if using), mixing just until a soft dough forms.
  4. Shape the dough into a log, disk, or press into a pan. Chill for 20–30 minutes.
  5. Preheat the oven to 325°F (165°C).
  6. If making bars or rounds, dock the dough lightly with a fork. Sprinkle with granulated sugar if desired.
  7. Bake for about 12 minutes, or until edges are lightly golden while centers remain pale.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the dough to keep cookies tender.

Powdered sugar creates a softer texture than granulated sugar.

Dough can be shaped as slice-and-bake logs or pressed into pans.

Cookies store well and are ideal for gifting.

Optional flavorings can be mixed in during creaming stage.
