Slow Cooker Garlic Parmesan Chicken is a flavorful and easy-to-make meal that combines tender chicken with a creamy garlic Parmesan sauce. The slow cooker does all the work, infusing the chicken with rich flavors and making it incredibly juicy. Perfect for busy weeknights or a comforting meal for any gathering, this dish includes potatoes for a complete, one-pot dinner.
4 chicken thighs (with bones and skin)
3–4 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon garlic salt
1 teaspoon paprika
1 cup grated Parmesan cheese
1 pound baby potatoes (can halve)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Prepare the Seasoning:
In a small bowl, combine minced garlic, garlic salt, paprika, 2 tablespoons of olive oil, and salt and pepper to taste.
Brown the Chicken:
Rub half of the seasoning mixture on the chicken thighs. Heat 1 tablespoon of olive oil in a skillet over medium heat. Brown the chicken thighs for about 2 minutes on each side until golden. This step enhances flavor.
Layer the Ingredients:
Place the baby potatoes in the slow cooker, seasoning them with the remaining seasoning mixture. Arrange the browned chicken thighs on top.
Cook:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
Add Parmesan:
When the chicken is done, sprinkle the grated Parmesan cheese over the chicken and potatoes.
Serve:
Garnish with freshly chopped parsley and serve hot with steamed veggies, roasted potatoes, or creamy mashed potatoes.
Substitute the Chicken: You can use chicken breasts or drumsticks, but the cooking time will need adjustment.
Add Veggies: Feel free to add vegetables like carrots, bell peppers, or onions for extra flavor.
Creamy Sauce: For a richer sauce, stir in some heavy cream or cream cheese in the last hour of cooking.
