A rich and indulgent no-bake Snickers cheesecake with a buttery biscuit base, creamy chocolate filling, and chunks of Snickers in every bite.

Ingredients

250g digestive biscuits

125g butter, melted

190g milk chocolate, melted

500g cream cheese, softened

¼ cup brown sugar

2 Snickers bars, diced

125g thickened cream

2 Snickers bars, chopped (for topping)

Instructions

  1. Line the base of a 23cm springform tin with baking paper.
  2. Crush the digestive biscuits into fine crumbs using a food processor.
  3. Add the melted butter to the crumbs and mix until fully combined.
  4. Press the mixture firmly into the base of the tin and refrigerate while preparing the filling.
  5. Melt the milk chocolate and allow it to cool slightly.
  6. In a mixing bowl, beat the cream cheese and brown sugar until smooth and creamy.
  7. Add the melted chocolate and mix until fully incorporated.
  8. Fold in the diced Snickers bars.
  9. Add the thickened cream and mix for about 1 minute until thick and smooth.
  10. Pour the filling over the chilled base and smooth the top.
  11. Sprinkle chopped Snickers over the top.
  12. Refrigerate overnight (at least 12 hours) until fully set.
  13. Remove from the tin, let sit at room temperature for 20 minutes, slice, and serve.

Notes

Chilling overnight ensures clean slices and a firm texture.

Milk chocolate can be replaced with dark chocolate for a richer flavor.

Use a hot knife wiped clean between cuts for neat slices.

Chocolate digestive biscuits can be used for a richer base.
