These Soft and Chewy Sugar Cookies are buttery, tender, and bursting with warm vanilla flavor. Ingredients

  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 ¼ cups granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract

Instructions

  • Preheat & Prepare:
    Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Mix Dry Ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream Butter & Sugar:
    In a large bowl, beat the softened butter and 1 ¼ cups of sugar until light and fluffy.
  • Add Wet Ingredients:
    Mix in the egg, egg yolk, and vanilla extract until combined.
  • Combine & Form Dough:
    Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Roll in Sugar:
    Scoop dough into 1-inch balls and roll them in the extra granulated sugar.
  • Bake:
    Place the dough balls on the prepared baking sheets and bake for 8-9 minutes, or until the tops are just set.
  • Cool & Serve:
    Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
