These Soft Oatmeal Cookies are chewy, flavorful, and easy to make! With the comforting taste of cinnamon and oats, they’re perfect for snacking or sharing. Customize with raisins, chocolate chips, or nuts for a treat everyone will love.

Ingredients

  • Dry Ingredients: 2 cups all-purpose flour, 1½ teaspoons ground cinnamon, 1 teaspoon baking soda, 1 teaspoon salt
  • Wet Ingredients: 1 cup unsalted butter (softened), 1 cup white sugar, 1 cup packed brown sugar, 2 large eggs, 1 teaspoon vanilla extract
  • Main Ingredient: 3 cups quick-cooking oats

Instructions

  1. Preheat Oven: Set to 375°F (190°C) and prepare baking sheets with parchment paper or silicone mats.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, cinnamon, baking soda, and salt.
  3. Cream Butter & Sugars: In a large bowl, beat softened butter with white and brown sugars until smooth.
  4. Add Eggs & Vanilla: Beat in eggs one at a time, then add vanilla extract.
  5. Combine Mixtures: Gradually mix in the dry ingredients, stirring until just combined.
  6. Add Oats: Fold in quick-cooking oats.
  7. Form Cookies: Drop rounded tablespoonfuls onto the baking sheets, spacing them about 2 inches apart.
  8. Bake: Bake for 8–10 minutes, until the edges are lightly golden.
  9. Cool: Let cookies cool on the baking sheets for a few minutes before transferring to wire racks.

Notes
