Spicy Blueberry Bliss Popsicles combine sweet blueberries with a spicy kick from jalapeños, offering a refreshing, hydrating treat made with coconut water. A perfect summer snack that’s both delicious and healthy.

Ingredients

2 cups fresh blueberries (or frozen, thawed)

1 cup coconut water

2 tablespoons honey or agave syrup (adjust for sweetness)

12 jalapeño peppers (seeds removed, finely chopped)

Juice of 1 lime

1 teaspoon fresh mint leaves (optional)

A pinch of salt

Instructions

  1. Rinse fresh blueberries under cold water or thaw frozen blueberries for about 30 minutes.
  2. In a blender, combine blueberries, coconut water, honey or agave syrup, jalapeños, lime juice, mint (if using), and salt. Blend until smooth. Adjust sweetness or spice level to taste.
  3. For a smoother texture, strain the mixture through a fine mesh sieve to remove the skins, if desired.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
  5. Insert popsicle sticks into each mold if necessary.
  6. Freeze for at least 4-6 hours or until completely solid.
  7. To unmold, run warm water over the outside of the molds for a few seconds and carefully pull out each popsicle.
  8. Serve and enjoy these refreshing, spicy popsicles on a hot day!

Notes

If you like it spicier, add more jalapeño or a pinch of cayenne pepper.

Adjust the sweetness with more honey, agave, or any sweetener of choice.
