Ingredients

  • ½ cup butter
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 (4.5-ounce) can mushrooms, drained
  • 1 (6-ounce) package herb and garlic feta, crumbled
  • 1 (8-ounce) package shredded Cheddar cheese, divided
  • Salt and pepper to taste
  • 1 deep-dish pie shell
  • 4 eggs
  • 1 cup milk

Instructions

  • Preheat Oven:

    • Preheat oven to 375°F (190°C).
  • Sauté Aromatics:

    • In a medium skillet, melt butter over medium heat.
    • Add onion and garlic, sauté until lightly browned (about 7 minutes).
  • Prepare Spinach:

    • Drain spinach thoroughly to remove excess moisture. Press between paper towels if needed.
  • Assemble Filling:

    • In a mixing bowl, combine sautéed onion and garlic, drained spinach, mushrooms, feta cheese, and half of the shredded Cheddar.
    • Season with salt and pepper to taste.
  • Prepare Pie Shell:

    • Place the deep-dish pie shell on a baking sheet.
    • Evenly spread the spinach mixture into the pie shell.
  • Prepare Custard Mixture:

    • In a separate bowl, whisk together eggs and milk.
    • Pour over the spinach filling.
    • Sprinkle the remaining Cheddar cheese on top.
  • Bake:

    • Bake in the preheated oven for 45 minutes, or until the center is set and the top is golden brown.
    • To check for doneness, insert a knife into the center—it should come out clean.
  • Cool and Serve:

    • Let the quiche cool for 10 minutes before slicing.
    • Serve warm or at room temperature.
