Ingredients

1 cup fresh spinach, washed and chopped

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

1 cup whole milk

3 large eggs, separated

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated cheese (e.g., Gruyère or Parmesan)

A pinch of nutmeg

Optional: fresh herbs for garnish (such as parsley or chives)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt 1 tablespoon of butter in a skillet. Add chopped spinach and cook until wilted. Set aside to cool.
  3. In a saucepan, melt the remaining butter, whisk in flour, and cook for 1–2 minutes until golden.
  4. Gradually whisk in milk and stir until thickened (3–5 minutes).
  5. Remove from heat, stir in spinach, salt, pepper, nutmeg, and cheese until melted.
  6. Beat egg yolks until creamy, then whisk in the spinach mixture.
  7. In a clean bowl, beat whites to stiff peaks. Fold one-third into the spinach mixture.
  8. Gently fold in remaining egg whites in two parts.
  9. Grease a soufflé dish or ramekins and fill 3/4 full with mixture.
  10. Bake for 25–30 minutes until puffed and golden.
  11. Serve immediately.
