Ingredients

  • 1 box of strawberry cake mix (Pillsbury recommended)
  • 2 large eggs
  • 1/2 cup vegetable or canola oil
  • 1 tsp pure vanilla extract
  • 1/4 cup strawberry preserves (or jam)
  • 23 tbsp milk (whole, 2%, skim, or cream)
  • Optional: 2 oz cream cheese (for frosting)

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8×8 square baking pan.
  • In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Stir until smooth and thick.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 18-22 minutes or until a toothpick inserted comes out mostly clean.
  • Let the brownies cool completely before adding the frosting.
  • For frosting, whisk powdered sugar, strawberry jam, milk, and cream cheese (optional) until smooth and thick. Spread over cooled brownies.
