Ingredients
1 (15 oz) box strawberry cake mix
1/3 cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup white chocolate chips, divided
Instructions
- Preheat the oven to 325°F (165°C) and line two cookie sheets with parchment paper or spray with non-stick cooking spray.
- In a large mixing bowl, combine the strawberry cake mix, vegetable oil, eggs, and vanilla extract. Mix until smooth and fully combined.
- Fold in 3/4 cup of the white chocolate chips.
- Using a medium cookie scoop, portion the dough onto the prepared cookie sheets, leaving space between each cookie.
- Gently press the remaining 1/4 cup of white chocolate chips into the tops of the dough.
- Bake for about 10 minutes, just until the cookies begin to turn lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
