Ingredients

1 cup Golden Oreo cookies, crushed

6 small flour tortillas

2 tablespoons butter, melted (for the taco shells)

1/2 cup graham cracker crumbs

1 tablespoon cinnamon sugar

1 cup fresh strawberries, chopped

Instructions

  1. Prepare the Crunch Topping:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, mix the crushed Golden Oreos, melted butter, and strawberry gelatin until well combined.
    • Spread the mixture evenly on a baking sheet and bake for 7–8 minutes.
    • Allow it to cool completely, then break it into small crumble-sized pieces.
  2. Prepare the Taco Shells:
    • Brush both sides of each tortilla with melted butter.
    • In a shallow bowl, combine graham cracker crumbs and cinnamon sugar. Press each tortilla into this mixture, coating both sides.

    • Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined and smooth.
  4. Assemble the Tacos:
    • Spoon or pipe the cheesecake filling into each taco shell.
    • Top with freshly chopped strawberries and sprinkle generously with the strawberry crunch topping.
    • Serve immediately or refrigerate until ready to serve.
