Ingredients

For the Filling:

8 cups chopped rhubarb

1 cup sliced fresh strawberries

2 cups white sugar

2 tablespoons all-purpose flour

For the Topping:

¾ cup brown sugar

¾ cup quick-cooking oats

¾ cup all-purpose flour

1 teaspoon ground cinnamon

½ cup butter (cut into small pieces)

Instructions

  • Preheat the Oven and Prepare the Dish:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.

  • Prepare the Fruit Filling:
In a bowl, combine the chopped rhubarb, sliced strawberries, white sugar, and 2 tablespoons flour. Toss together until the fruit is evenly coated. Spread the fruit mixture evenly in the prepared baking dish.

  • Make the Topping:
In a separate bowl, combine brown sugar, oats, ¾ cup flour, and ground cinnamon. Cut in the butter using two knives or a pastry blender until the mixture forms coarse crumbs. Sprinkle this topping mixture evenly over the fruit filling.

  • Bake the Cobbler:
Bake for 25-30 minutes or until the topping is golden brown and the fruit filling is bubbling. The topping should be crisp and the fruit tender.

  • Serve:
Let the cobbler cool slightly before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent treat.

Notes

Fruit Variations: Feel free to experiment by adding other fruits, like blueberries or raspberries, for a unique twist on this classic cobbler.

Butter Tip: Using cold butter in the topping helps create the perfect crumbly texture.

Oat Substitution: If you prefer, you can replace the oats with more flour or crushed nuts for a different texture.
