Strawberry Shortcake Sushi is a fun and creative dessert roll made with soft cake, whipped cream, and fresh strawberries. It’s a light, creamy treat that’s perfect for parties or a fun kitchen project with the kids.

Ingredients

1 pound cake (store-bought or homemade)

1 cup whipped cream or Cool Whip

1 cup fresh strawberries, finely diced

Optional: strawberry jam or puree for spreading

Optional toppings: graham cracker crumbs, sprinkles, or shredded coconut

Instructions

  1. Slice the pound cake lengthwise into flat, thin sheets, about 1/4” thick. Use a serrated knife or cake leveler for even slices.
  2. Flatten each slice gently using a rolling pin to make it easier to roll.
  3. Spread a thin layer of whipped cream or Cool Whip across each cake sheet.
  4. Place diced strawberries along one edge of the cake. Optionally, drizzle a bit of strawberry jam or puree for extra flavor.
  5. Carefully roll the cake sheet into a tight spiral, like making sushi.
  6. If desired, roll the outside of the cake roll in graham cracker crumbs, sprinkles, or shredded coconut for added texture.
  7. Chill the rolls in the refrigerator for 15-30 minutes for neater slices.
  8. Slice the rolls into 1” rounds and serve with toothpicks or chopsticks for extra fun!

Notes

For a tropical twist, try using mango, kiwi, or banana in place of strawberries.

Angel food cake or sponge cake can also be used for a lighter texture.

Serve with a dipping sauce like melted chocolate or strawberry sauce for added indulgence.
