Succotash is a vibrant, flavorful dish made with lima beans, corn, and savory vegetables. It’s a perfect side dish that combines sweet, savory, and aromatic flavors.

Ingredients

2 tablespoons salted butter

½ small onion, diced

½ red bell pepper, diced

1 clove garlic, minced

12 ounces frozen lima beans

10 ounces frozen corn kernels

1 teaspoon salt (more to taste)

¼ teaspoon black pepper

2 cups cherry tomatoes, halved

2 tablespoons chopped fresh parsley

2 slices of your preferred savory ingredient, chopped into small pieces

Instructions

  1. Prepare the lima beans: Bring a medium saucepan of water to a boil. Add the lima beans and simmer uncovered for 8 to 10 minutes. Drain the beans, reserving ¼ cup of the cooking liquid.
  2. Cook the savory ingredient: While the lima beans are simmering, heat a large skillet over medium-high heat. Add the chopped savory ingredient and cook until crispy or golden brown. Transfer the cooked ingredient to a paper towel-lined plate and reserve 1 tablespoon of the fat in the skillet.
  3. Sauté the vegetables: In the same skillet, add the butter, onion, and bell pepper. Cook until the onion is tender, about 4 minutes. Add the minced garlic and cook for 1 minute more, stirring constantly.
  4. Add the corn and lima beans: Stir in the corn, drained lima beans, reserved cooking liquid, salt, and black pepper. Cook for 2 to 3 minutes until heated through.
  5. Finish the dish: Remove the skillet from heat and add the cooked savory ingredient into the mixture. Stir in the cherry tomatoes and fresh parsley.
  6. Serve: Transfer the succotash to a serving dish and serve immediately.

Notes

For a spicy version, add a chopped jalapeño or red pepper flakes.

Add cheese like cheddar or Parmesan for a cheesy twist.

Feel free to add other vegetables such as zucchini, peas, or carrots for more flavor and texture.
