Ingredients

1 1/2 cups almond flour

1/4 cup unsweetened cocoa powder (optional)

1/4 cup melted coconut oil or unsalted butter

2 tbsp erythritol or preferred sugar substitute

1/2 tsp vanilla extract

1 pinch salt

16 oz cream cheese, softened

1/2 cup erythritol or preferred sugar substitute

2 large eggs

1 tsp vanilla extract

1 tbsp lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix almond flour, cocoa powder (if using), melted coconut oil, erythritol, vanilla extract, and salt until combined.
  3. Press the crust mixture evenly into the bottom of the prepared dish.
  4. Bake the crust for 10–12 minutes until lightly golden, then let cool slightly.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Add erythritol, eggs, vanilla extract, and lemon juice, and beat until fully creamy.
  7. Pour the cheesecake filling over the cooled crust and spread evenly.
  8. Bake for 20–25 minutes, until edges are set and the center slightly jiggles.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove, cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.

Notes

The cocoa powder is optional for a chocolate-flavored crust.

Do not overbake—cheesecake sets as it cools.

Chill well before slicing for clean edges.

Store chilled for best texture and flavor.

Freeze individual bars for longer storage.
