Ingredients

2 boneless, skinless chicken breasts, cut into bite-sized pieces

½ cup cornstarch

2 eggs, beaten

½ cup vegetable oil

1 cup pineapple chunks

1 bell pepper, chopped

½ cup white vinegar

¼ cup ketchup

⅓ cup brown sugar

1 tablespoon soy sauce

1 teaspoon garlic powder

Instructions

  1. Coat the Chicken: Coat chicken pieces in cornstarch, then dip them into the beaten eggs.

  2. Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown, about 5-7 minutes. Remove and drain on paper towels.

  3. Prepare the Sauce: In a separate pan, combine white vinegar, ketchup, brown sugar, soy sauce, and garlic powder. Bring to a simmer over medium heat.

  4. Add Pineapple and Bell Pepper: Add the pineapple chunks and chopped bell pepper to the sauce. Cook for 2-3 minutes until the vegetables soften.

  5. Combine: Toss the fried chicken into the sauce and stir to coat evenly. Let it simmer for another 2-3 minutes until the sauce thickens.

  6. Serve: Serve hot over rice or noodles for a complete meal.
