  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 6 oz pastrami, chopped
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 large eggs (optional, for serving)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Cook the Sweet Potatoes:
    • Heat olive oil in a large skillet over medium heat.
    • Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until softened.
  2. Sauté the Vegetables:
    • Add chopped onion, red bell pepper, and green bell pepper to the skillet.
    • Cook for another 5 minutes, stirring occasionally, until vegetables are tender.
  3. Add the Pastrami and Spices:
    • Stir in chopped pastrami, garlic powder, smoked paprika, salt, and black pepper.
    • Cook for another 5 minutes, allowing the flavors to blend and pastrami to crisp slightly.
  4. Optional: Cook the Eggs:
    • Make small wells in the hash and crack an egg into each.
    • Cover the skillet and cook until eggs reach desired doneness (about 3-5 minutes).
  5. Serve:
    • Remove from heat, garnish with chopped parsley, and serve hot.
