Tasty German Apple Pancakes

A light and fluffy baked German pancake with a caramelized apple base, warmly spiced with cinnamon and nutmeg. Perfect for breakfast, brunch, or dessert, this dish is custardy, golden, and beautifully indulgent.

Ingredients

4 eggs

1/2 cup all-purpose flour (unbleached)

1 tbsp granulated sugar

1/2 tsp baking powder

1 pinch salt

1 cup milk

1 tsp vanilla extract

2 tbsp unsalted butter, melted

1/2 tsp ground nutmeg

1/4 cup unsalted butter

1/2 cup granulated sugar, divided

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1 large tart apple, peeled, cored, and sliced

Instructions

  1. In a large bowl, whisk together eggs, flour, 1 tablespoon sugar, baking powder, and a pinch of salt.
  2. Slowly add the milk while stirring until smooth. Mix in vanilla, melted butter, and nutmeg. Let the batter rest for at least 30 minutes or overnight in the refrigerator.
  3. Preheat the oven to 425°F (220°C).
  4. In a 10-inch oven-proof skillet, melt 1/4 cup butter over medium heat. Brush butter up the sides of the pan.
  5. Mix 1/4 cup sugar, cinnamon, and nutmeg, then sprinkle evenly over the butter in the skillet.
  6. Arrange apple slices in a single layer, sprinkle with the remaining 1/4 cup sugar, and cook until bubbling and tender, about 2–3 minutes.
  7. Pour the rested batter evenly over the apples.
  8. Bake for 15 minutes at 425°F, then reduce the heat to 375°F (190°C) and bake for another 10 minutes until puffed and golden brown.
  9. Remove from the oven, slide onto a platter, and cut into wedges.
  10. Serve warm with a dusting of powdered sugar or cinnamon if desired.

Notes

Swap apples with pears for a softer, more floral flavor.

Add raisins, dried cranberries, or toasted nuts for extra sweetness and crunch.

Use cardamom or allspice instead of nutmeg for a different spice profile.

For a dairy-free version, use almond or oat milk and dairy-free margarine.
