Ingredients

Tater Tot Bowl:

  • 1 bag (32 oz) frozen tater tots
  • 1 tablespoon olive oil (optional, for extra crispness)
  • 1 ½ cups shredded cheddar cheese (or your favorite cheese)
  • 4 large eggs
  • Salt and pepper, to taste

Sausage Gravy:

  • 1 pound Halal sausage (beef, chicken, turkey, or plant-based sausage)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk (or dairy-free milk alternative)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • A pinch of cayenne pepper (optional, for heat)

Garnishes (Optional):

  • Chopped fresh parsley or green onions
  • Hot sauce
  • Extra shredded cheese for topping

Instructions

1. Prepare the Tater Tots:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Spread the frozen tater tots evenly on the baking sheet. Drizzle with olive oil (if using).
  3. Bake according to package instructions (usually 20-25 minutes), or until golden and crispy. Halfway through, shake the pan to ensure even cooking.

2. Make the Sausage Gravy:

  1. Cook the sausage in a large skillet over medium heat. Break it into small crumbles while cooking. Continue until browned and fully cooked, about 7-10 minutes.
  2. Add the butter to the skillet and let it melt. Stir in the flour and cook for 1-2 minutes, creating a roux.
  3. Gradually add the milk, whisking continuously to prevent lumps. Stir until the gravy thickens, about 3-4 minutes.
  4. Season with garlic powder, onion powder, salt, pepper, and a pinch of cayenne pepper (if using). If the gravy becomes too thick, add more milk to achieve the desired consistency.

3. Cook the Eggs:

  1. Scramble the eggs: In a non-stick skillet over medium heat, add a small amount of butter or oil. Crack the eggs into the skillet and cook, stirring gently, until scrambled and cooked through. Season with salt and pepper.

4. Assemble the Tater Tot Breakfast Bowls:

  1. Divide the baked tater tots into individual bowls.
  2. Top with scrambled eggs and pour sausage gravy generously over the top.
  3. Add the shredded cheese over the hot gravy and let it melt.

5. Garnish and Serve:

  1. Garnish with chopped parsley or green onions, and serve with hot sauce or extra shredded cheese for added flavor.

  • Spicy Sausage Gravy: Add more cayenne pepper or diced jalapeños to the gravy for a spicier kick.
  • Vegan Option: Use plant-based sausage, dairy-free milk, and vegan cheese to make this dish vegan.
  • Southwestern Style: Add diced peppers, onions, and taco seasoning to the gravy for a southwestern-inspired flavor.
