A classic Texas-style peach cobbler made with fresh ripe peaches baked under a buttery, cake-like topping that turns golden and crisp around the edges while staying soft and creamy in the center.

Ingredients

12 tablespoons butter, divided

1 1/2 cups sugar, divided

8 medium fresh ripe peaches, peeled and sliced

1 teaspoon fresh lemon zest

1 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/2 cups buttermilk (or milk)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place 4 tablespoons of butter in a 9×13-inch baking dish and set it in the oven until melted. Remove and set aside.
  3. In a medium bowl, mix 1/4 cup of sugar with the sliced peaches and lemon zest. Let rest.
  4. In a large bowl, whisk together the flour, baking powder, remaining 1 1/4 cups sugar, and salt.
  5. Melt the remaining 8 tablespoons of butter and let cool slightly.
  6. Whisk the melted butter and buttermilk into the dry ingredients until smooth.
  7. Pour the batter evenly into the baking dish over the melted butter.
  8. Sprinkle the peach mixture evenly over the batter without stirring.
  9. Bake for 42–48 minutes, until golden brown with crisp edges and a set center.

Notes

Do not stir the batter and peaches together—this allows the cobbler to rise properly.

Add cinnamon or nutmeg for extra warmth.

Serve warm for the best texture and flavor.

Pairs well with vanilla ice cream or whipped cream.
