Tomato Bisque with Grilled Cheese Croutons is a comforting and elegant dish that combines a velvety smooth tomato soup with crispy, cheesy grilled cheese cubes. It’s the perfect balance of rich tomato flavor, aromatic herbs, and creamy texture, topped with golden grilled cheese croutons for a delightful crunch in every bite.

Ingredients

For the Bisque:

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

½ teaspoon dried thyme

½ teaspoon salt

¼ teaspoon black pepper

½ cup heavy cream

1 teaspoon sugar (optional)

For the Grilled Cheese Croutons:

4 slices of bread

4 slices of sharp cheddar cheese

2 tablespoons butter

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add diced onions and sauté until translucent, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in crushed tomatoes, vegetable broth, basil, thyme, salt, pepper, and sugar if using.
  5. Bring the soup to a simmer and cook for 15–20 minutes.
  6. Remove from heat and use an immersion blender to puree the soup until smooth. (Alternatively, carefully blend in batches in a blender.)
  7. Stir in heavy cream and return the soup to a low simmer for 5 minutes.
  8. While the soup is simmering, prepare the grilled cheese sandwiches.
  9. Heat a skillet over medium heat and butter the outside of each bread slice.
  10. Place a slice of cheese between the bread, buttered side out, and grill until golden brown on both sides, with the cheese melted.
  11. Remove from heat, let the sandwiches cool slightly, then cut into small crouton-sized cubes.
  12. Ladle the bisque into bowls and top with grilled cheese croutons before serving.

Notes

If you prefer a spicier version, add red pepper flakes or hot sauce to the soup.

Store the soup and croutons separately to preserve the crispiness of the croutons.

For a dairy-free version, use coconut cream and dairy-free cheese for the grilled cheese croutons.
