Vanilla French beignets are light, airy, and deliciously sweet pastries, deep-fried to golden perfection and dusted with powdered sugar. Infused with vanilla, these homemade beignets are perfect for breakfast, dessert, or a sweet snack, just like the ones from a French bakery or New Orleans café!

Ingredients

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 egg
  • 1 tbsp vanilla extract
  • 4 tbsp unsalted butter, melted
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Activate the Yeast: In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Prepare the Dough: In a large bowl, combine flour and salt. Add the yeast mixture, egg, vanilla, and melted butter. Stir until a dough forms.
  3. Knead and Rise: Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
  4. Roll and Cut: Roll the dough to about ¼-inch thickness and cut into 2-inch squares or desired shapes.
  5. Heat Oil: In a deep fryer or large pot, heat oil to 360°F (182°C).
  6. Fry the Beignets: Fry in small batches, turning occasionally, until golden brown (about 1-2 minutes per side).
  7. Drain and Dust: Remove from oil, place on a paper towel, and immediately dust with powdered sugar.
  8. Serve Warm: Enjoy fresh with coffee or hot chocolate.

Notes

  • For cinnamon sugar beignets, coat them in a mix of cinnamon and sugar instead of powdered sugar.
  • Fill with custard, jam, or Nutella for a stuffed beignet variation.
  • To bake instead of fry, bake at 375°F for 10-12 minutes for a lighter option.
