This Vanilla Fruit Cobbler is a warm, comforting dessert featuring juicy plums baked beneath a golden vanilla topping and sprinkled with cinnamon sugar. It’s simple, cozy, and perfect for serving with creamy vanilla custard.

Ingredients

2 x 825 g cans whole plums, well drained

1 packet vanilla cupcake mix

310 ml milk

Cinnamon sugar, to taste

Vanilla custard, to serve

Instructions

  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Remove the pits from the plums and place them evenly in a 6-cup capacity ovenproof dish.
  3. Prepare the cupcake mix according to packet instructions by adding the milk and stirring until smooth.
  4. Pour the vanilla batter evenly over the plums, covering them mostly.
  5. Sprinkle generously with cinnamon sugar for extra sweetness and flavor.
  6. Bake for about 1 hour, or until the topping is golden and a skewer inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
  7. Let the cobbler rest for 5 minutes before serving warm with vanilla custard.

Notes

Use fresh plums instead of canned if available; add a little sugar if they’re not very juicy.

Swap the plums for peaches, apricots, pears, or berries for a seasonal twist.

For a richer topping, replace some of the milk with cream.

Add chopped nuts or a drizzle of honey for extra flavor and texture.

Best served warm with custard, cream, or ice cream.
