Ingredients

  • 1 lb ground beef (80-90% lean)
  • 1 yellow onion, diced
  • 1 packet chili seasoning mix
  • 1 cup beef broth (or water)
  • 1 can kidney beans (or black/pinto beans)
  • 2 cups Fritos (or Doritos for a fun twist)
  • 2 cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, green onions, cilantro, guacamole

Instructions

  • Cook the meat: In a large skillet over medium heat, brown the ground beef with the diced onion until the beef is fully cooked and the onions are tender. Drain any excess grease.
  • Season the beef: Stir in the chili seasoning mix, beef broth (or water), drained kidney beans, and 1 cup of shredded cheese. Mix everything well.
  • Assemble and bake: Transfer the beef mixture to a casserole dish, spreading it evenly. Top with Fritos and the remaining cheese. Bake at 350°F for 10-15 minutes, until the cheese is melted and bubbly.
  • Top and serve: Add your choice of toppings such as shredded lettuce, tomatoes, sour cream, and jalapeños. Serve warm and enjoy!

Notes

  • You can customize the toppings based on your preferences.
  • Substitute ground turkey or chicken for a lighter version.
  • Use Doritos or tortilla chips instead of Fritos for a fun twist.
  • Store leftovers in an airtight container (without Fritos) for up to 3-4 days.
