This White Chocolate Fruit Pudding is a luxurious, festive dessert that blends creamy white chocolate with tart cranberries, glace cherries, and crunchy pistachios. Steamed until perfectly moist and tender, it’s rich, buttery, and full of texture. Served warm with vanilla custard, it’s an indulgent showstopper for holidays or special occasions.

Ingredients

225 g (1½ cups) plain flour

125 g (1½ cups) fresh white breadcrumbs

120 g (¾ cup) dried cranberries

100 g (½ cup) red glace cherries

100 g pistachio kernels

180 g white chocolate, chopped

175 g salted butter, at room temperature

125 ml (½ cup) sweetened condensed milk

100 g (½ cup) caster sugar

3 eggs

180 g white chocolate, melted and cooled

Vanilla custard, to serve

Instructions

  1. Grease a 2L (8-cup) ceramic pudding basin and line the base with baking paper.
  2. In a large bowl, combine flour, breadcrumbs, cranberries, glace cherries, pistachios, and chopped white chocolate. Stir until fruit and nuts are evenly coated.
  3. In another bowl, beat butter, condensed milk, and sugar with electric beaters until pale and creamy. Add eggs one at a time, beating well after each. Add melted white chocolate and beat until smooth.
  4. Fold the butter mixture into the dry ingredients until fully combined.
  5. Spoon mixture into the prepared basin and smooth the top. Cover with baking paper and foil, securing tightly with string or a rubber band.
  6. Place the basin in a large saucepan and pour boiling water halfway up the side. Cover and steam over low heat for about 4 hours, topping up with water as needed. The pudding is ready when a skewer inserted in the center comes out clean.
  7. Allow pudding to stand for 15 minutes before turning out onto a serving plate. Serve warm with vanilla custard.

Notes

Swap pistachios for macadamias, almonds, or hazelnuts for a twist.

Add orange zest for a hint of citrus or drizzle with caramel sauce before serving.

To bake instead of steam, cook at 160°C for 1 hour 30 minutes or until cooked through.

For a lighter pudding, reduce the white chocolate by half and add extra fruit.
