Witch’s Cauldron Halloween Brownie Bites are fudgy, festive mini brownies shaped like bubbling cauldrons, filled with colorful cream cheese frosting, and topped with spooky decorations like candy eyeballs and sprinkles. Perfect for Halloween parties, school events, or themed dessert tables.

Ingredients

12 Tbsp unsalted butter, cut into tablespoon-sized pieces

1/2 cup semisweet chocolate chips

1/2 cup natural cocoa powder

1/2 tsp instant coffee grounds (optional)

1 cup packed light or dark brown sugar

1/2 cup granulated sugar

2 large eggs + 1 large egg yolk

1 tsp vanilla extract

1 cup + 2 Tbsp all-purpose flour

1/2 tsp baking powder

1/2 tsp salt

1/2 cup salted butter, softened (for frosting)

8 oz cream cheese, softened (brick-style, for frosting)

1 tsp vanilla extract (for frosting)

4 cups powdered sugar (for frosting)

Food coloring (mint green, purple, or other Halloween shades)

Colored sprinkles

Candy eyeballs

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 24-count mini muffin tin with baking spray or grease and flour each cup.
  2. In a microwave-safe bowl, melt butter and chocolate chips in 30-second intervals until smooth. Stir in cocoa powder and instant coffee (if using).
  3. Mix in brown sugar and granulated sugar until combined.
  4. Add eggs and egg yolk one at a time, mixing well, then stir in vanilla extract.
  5. In a separate bowl, whisk flour, baking powder, and salt. Fold into wet mixture until just combined.
  6. Scoop 1 1/2 tablespoons of batter into each muffin cup.
  7. Bake for 18 minutes or until a toothpick comes out with a few fudgy crumbs.
  8. Immediately press the center of each brownie with a rounded teaspoon to form a cauldron-like well. Let cool completely.
  9. For frosting: beat softened butter and cream cheese until smooth, then add vanilla extract. Gradually mix in powdered sugar until fluffy.
  10. Divide frosting into bowls and tint with food coloring.
  11. Spoon or pipe frosting into brownie wells, then decorate with sprinkles and candy eyeballs.

Notes

Swap cream cheese frosting with vanilla buttercream if preferred.

Add peppermint or almond extract to frosting for extra flavor.

Use orange, neon green, or black food coloring for variety.
