Zebra Semifreddo is a no-bake, easy-to-make dessert that combines creamy whipped cream layers with indulgent ice cream sandwiches. Drizzled with a cinnamon-chocolate sauce, this cool, rich dessert is perfect for any occasion and can be made ahead for a stress-free treat.

Ingredients

2 tbsp confectioners’ sugar

1/2 tsp pure vanilla extract

1 cup heavy cream (divided)

12 mini ice cream sandwiches

1 cup semisweet chocolate chips

1/2 tsp ground cinnamon

Instructions

  1. Make the Whipped Cream:

    • Beat confectioners’ sugar, vanilla, and 1 cup of cream with an electric mixer on medium-high speed until soft peaks form, about 1-2 minutes.

  2. Assemble the Semifreddo:

    • Line a 9×5-inch loaf pan with plastic wrap, leaving a 4-inch overhang.

    • Spread 1/2 cup of whipped cream on the bottom of the pan, then add 4 ice cream sandwiches. Repeat twice, ending with a layer of whipped cream.

    • Freeze for at least 8 hours or up to 2 days.

  3. Prepare the Chocolate Sauce:

    • In a microwave-safe bowl, melt chocolate chips, cinnamon, and the remaining 5 tablespoons of cream on HIGH for 45 seconds to 1 minute. Stir until smooth, then cool slightly.

  4. Serve:

    • Remove the semifreddo from the freezer and lift it out of the pan using the plastic wrap.

    • Discard the plastic wrap and drizzle the chocolate sauce over the top. Slice and serve.

Notes

  • Variations:

    • Add crushed nuts like almonds or walnuts for extra crunch.

    • Use different flavored ice cream sandwiches like chocolate or mint for a twist.

    • Top with sprinkles, chopped chocolate, or fruit for added flavor and texture.

  • Storage:

    • Keep any leftovers covered in the freezer for up to 2 days.

    • If too firm, allow it to sit at room temperature for 5-10 minutes before serving.
