2 tbsp confectioners’ sugar
1/2 tsp pure vanilla extract
1 cup heavy cream (divided)
12 mini ice cream sandwiches
1 cup semisweet chocolate chips
1/2 tsp ground cinnamon
Make the Whipped Cream:
Beat confectioners’ sugar, vanilla, and 1 cup of cream with an electric mixer on medium-high speed until soft peaks form, about 1-2 minutes.
Assemble the Semifreddo:
Line a 9×5-inch loaf pan with plastic wrap, leaving a 4-inch overhang.
Spread 1/2 cup of whipped cream on the bottom of the pan, then add 4 ice cream sandwiches. Repeat twice, ending with a layer of whipped cream.
Freeze for at least 8 hours or up to 2 days.
Prepare the Chocolate Sauce:
In a microwave-safe bowl, melt chocolate chips, cinnamon, and the remaining 5 tablespoons of cream on HIGH for 45 seconds to 1 minute. Stir until smooth, then cool slightly.
Serve:
Remove the semifreddo from the freezer and lift it out of the pan using the plastic wrap.
Discard the plastic wrap and drizzle the chocolate sauce over the top. Slice and serve.
