These chocolate covered nuts combine crunchy raw nuts with a smooth dark chocolate and cream coating for an easy, elegant no-bake treat. Add flaky sea salt for a delicious sweet-and-salty finish.

Ingredients

3 cups raw unsalted nuts (walnuts, pecans, cashews, hazelnuts, macadamia nuts, etc.)

4 ounces 60% dark chocolate, coarsely chopped

3 tablespoons heavy cream

1 tablespoon flaky sea salt (optional)

Instructions

  1. Cover a large baking sheet with parchment or wax paper and set aside.
  2. Combine the chopped dark chocolate and heavy cream in a small saucepan over low heat. Stir constantly until the chocolate is completely melted and the mixture is smooth and creamy, then remove from the heat.
  3. Dip each nut halfway into the melted chocolate mixture and place it on the prepared baking sheet, leaving a little space between each piece.
  4. If desired, sprinkle a small amount of flaky sea salt over the chocolate-covered portion of each nut before the coating sets.
  5. Refrigerate the dipped nuts for 30 to 40 minutes, or until the chocolate coating is completely set.
  6. Serve chilled or transfer the chocolate covered nuts to an airtight container for storage in the refrigerator or freezer.

Notes

Walnuts, pecans, cashews, hazelnuts, macadamia nuts, or a mixture of nuts can be used.

For a toasted flavor, roast the raw nuts first and allow them to cool completely before dipping.

Milk chocolate can be substituted for a sweeter coating, while higher-percentage dark chocolate provides a more intense cocoa flavor.

Flaky sea salt is optional and can be replaced with finely chopped nuts, shredded coconut, or a light dusting of cocoa powder.

The nuts can be completely coated in chocolate instead of dipped halfway if preferred.

Store in an airtight container in the refrigerator and separate stacked layers with parchment or wax paper.

For longer storage, freeze in a freezer-safe airtight container and thaw in the refrigerator before serving.
