This coconut jelly is a light and refreshing dessert with a smooth texture and delicate coconut flavor. The softly firm jelly cubes are easy to make and perfect for warm weather, casual gatherings, or elegant desserts.

Ingredients

2 cups coconut milk (full-fat)

1 cup water

1/2 cup sugar

2 teaspoons agar-agar powder or 1 tablespoon gelatin

1 teaspoon vanilla extract (optional)

Pinch of salt

Coconut flakes, for topping (optional)

Light syrup or honey, for serving (optional)

Fresh mango or berries, for serving (optional)

Instructions

  1. Measure all ingredients and set them nearby for easy preparation.
  2. In a saucepan, combine the coconut milk, water, sugar, and salt. Stir until the sugar begins to dissolve.
  3. Sprinkle the agar-agar powder evenly over the liquid and stir thoroughly to prevent clumps.
  4. Place the saucepan over medium heat and stir continuously until the agar dissolves completely and the mixture heats evenly.
  5. Bring the mixture to a gentle boil and cook for 2 to 3 minutes until slightly thickened.
  6. Remove the saucepan from the heat and stir in the vanilla extract if using.
  7. Pour the mixture carefully into a shallow dish or mold and spread evenly.
  8. Allow the mixture to cool at room temperature for 20 to 30 minutes until it begins to set.
  9. Transfer the dish to the refrigerator and chill for at least 2 hours until fully firm.
  10. Slice the jelly into cubes or desired shapes and serve chilled with optional toppings.

Notes

Use agar-agar for a firmer texture or gelatin for a softer jelly.

Full-fat coconut milk provides the richest flavor and texture.

Pandan extract can be added for a tropical aroma and green color.

Mango puree can be layered into the jelly for extra flavor.

Store in an airtight container in the refrigerator for up to 4 days.

Do not freeze, as the texture may become watery after thawing.

Add fresh fruit toppings just before serving for best freshness.
