Crispy Deli-Style Reuben Egg Rolls are a delicious twist on the classic Reuben sandwich. These golden, crispy egg rolls are stuffed with corned beef, tangy sauerkraut, and melted Swiss cheese, offering all the iconic flavors of a Reuben in a bite-sized form. Serve them with Thousand Island or horseradish dipping sauce for an extra burst of flavor. Perfect for snacks, appetizers, or party platters!

Ingredients

1 cup cooked corned beef, finely chopped or shredded

1 cup sauerkraut, well-drained and squeezed

1 cup shredded Swiss cheese

1012 egg roll wrappers

Small bowl of water (for sealing)

Oil for frying (vegetable or canola)

Optional Dipping Sauce:

1/2 cup Thousand Island dressing

1 tsp horseradish (optional, for extra zing)

Instructions

  • Prepare the Filling:

    • In a bowl, combine finely chopped corned beef, drained sauerkraut, and shredded Swiss cheese. Mix until evenly incorporated.

  • Roll the Egg Rolls:

    • Lay an egg roll wrapper in a diamond shape on a clean surface. Spoon 2-3 tablespoons of the filling into the center of the wrapper.

    • Fold the bottom corner up over the filling, then fold in the sides and roll tightly towards the top. Seal the edge with a little water to keep it from opening during frying.

  • Fry the Egg Rolls:

    • Heat oil in a deep pan to about 350°F (175°C). Carefully fry the egg rolls in batches of 2-3 at a time, cooking for 3–4 minutes, or until golden brown and crispy on all sides.

    • Remove the egg rolls from the oil and drain on a paper towel to remove excess oil.

  • Serve:

    • Serve the crispy Reuben egg rolls warm with Thousand Island dressing or horseradish dipping sauce on the side.

Variations:

Alternative Fillings: Use pastrami or turkey for a lighter Reuben version.

Baked or Air-Fried Version: For a healthier option, bake at 375°F (190°C) for 15-20 minutes or air fry at 350°F for 8-10 minutes, flipping halfway.
