Ingredients

For the Cookies:

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter (softened)

1 ½ cups granulated sugar

1 large egg

1 teaspoon vanilla extract

¼ cup cream soda

For the Butterbeer Icing (Red and Gold):

1 cup unsalted butter (softened)

4 cups powdered sugar

2 tablespoons heavy cream

1 teaspoon vanilla extract

Red and gold gel food coloring

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. In a separate large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. Gradually mix in the dry ingredients, alternating with the cream soda, until a soft dough forms.
  5. Cover the dough and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Roll the chilled dough into 1.5-inch balls and place on baking sheet.
  8. Bake for 10–12 minutes, until edges are set but centers remain soft. Cool on sheet 5 minutes before transferring to a wire rack.
  9. For the icing, beat butter until smooth. Gradually add powdered sugar, then heavy cream and vanilla. Beat until light and fluffy.
  10. Divide icing into two bowls; tint one red and one gold. Spoon into a piping bag side by side for swirl effect.
  11. Pipe or spread icing onto cooled cookies. Garnish with edible glitter or sprinkles. Allow icing to set before serving.
