Soft, cozy chai-spiced pear muffins made quickly with simple ingredients. Warm spices and sweet pears create tender, fragrant muffins perfect for breakfast or an afternoon snack in under 30 minutes.

Ingredients

1 1/2 cups all-purpose flour

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 cup milk

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 cup pears, finely diced

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, cardamom, ginger, cloves, and salt.
  3. In a separate bowl, mix milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the diced pears.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool briefly, then transfer muffins to a wire rack.
