Ready in just 15 minutes, it’s a delicious and satisfying keto-friendly dish.

Ingredients

For the Bowl:

  • 1 bag coleslaw mix
  • 1 lb corned beef, cut into strips
  • 23 tbsp butter
  • 1 cup Swiss cheese, shredded
  • Scallions for garnish

For the Russian Dressing:

  • 1 cup mayonnaise
  • ¼ cup sugar-free ketchup
  • 4 tsp horseradish
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • Pinch of pepper

Instructions

  • Heat the Skillet: Melt butter in a skillet over medium heat.
  • Sauté the Corned Beef: Add the corned beef and sauté, covered, for about 5 minutes.
  • Cook the Cabbage: Add coleslaw mix, cover, and cook for another 5 minutes until softened.
  • Melt the Cheese: Stir the mixture, then top with Swiss cheese. Cover until melted or place under a broiler for a bubbly finish.
  • Add Dressing & Garnish: Drizzle with homemade Russian dressing and top with scallions. Serve immediately.

Notes

  • Swap coleslaw mix for sauerkraut for an authentic Reuben taste.
  • Use pastrami or turkey instead of corned beef for a different protein option.
  • Make it spicier by adding extra hot sauce or cayenne pepper.
  • Serve in a low-carb tortilla or lettuce wrap for a different take.
