Millionaire Pie is a creamy, fruity chilled dessert with a buttery graham cracker crust and a fluffy filling packed with pineapple, coconut, toasted pecans, and maraschino cherries. It is easy to make ahead and perfect for parties, holidays, and potlucks.

Ingredients

1 ½ cups (180 g) graham cracker crumbs, about 12 crackers

1/4 cup (50 g) granulated sugar

6 tablespoons (85 g) unsalted butter, melted

8 ounces (1 block) full-fat cream cheese, softened

½ cup (100 g) granulated sugar

8 ounces crushed pineapple, juices reserved

2 tablespoons reserved pineapple juice

1 cup sweetened shredded coconut

½ cup pecan halves, toasted and chopped, plus more for garnish

1 cup maraschino cherries, chopped, plus more for garnish

12 ounces whipped topping or whipped cream

Instructions

  1. Preheat the oven to 350°F (180°C) with a rack in the center. For a no-bake crust, skip baking and freeze the prepared crust for 1 hour instead.
  2. Process the graham crackers into fine crumbs using a food processor, or crush them in a zip-top bag with a rolling pin.
  3. Stir 1/4 cup granulated sugar into the graham cracker crumbs, then mix in the melted butter until evenly moistened.
  4. Press the crumb mixture across the bottom and up the sides of a 9-inch pie plate, compacting it gently.
  5. Bake the crust for 10 minutes, then cool completely. For the no-bake option, freeze the crust for 1 hour.
  6. In a medium bowl, beat the softened cream cheese and ½ cup granulated sugar with an electric mixer on high speed for about 3 minutes, until smooth and creamy.
  7. Stir in the crushed pineapple, 2 tablespoons reserved pineapple juice, shredded coconut, toasted chopped pecans, and chopped maraschino cherries.
  8. Gently fold ⅔ of the whipped topping or whipped cream into the filling until evenly combined and fluffy.
  9. Spread the filling evenly into the cooled graham cracker crust and smooth the top.
  10. Loosely cover the pie with foil and refrigerate for at least 3 hours, or until the filling is firm enough to slice.
  11. Before serving, spread or pipe the remaining whipped topping or whipped cream over the chilled pie.
  12. Garnish with additional maraschino cherries and chopped pecans, then slice and serve chilled.

Notes

For extra cherry flavor, replace the 2 tablespoons pineapple juice with 2 tablespoons maraschino cherry juice.

For more crunch, add extra toasted pecans to the filling or sprinkle them over the finished pie.

The coconut can be toasted and cooled before adding for a deeper, nuttier flavor.

For a no-bake version, freeze the prepared graham cracker crust for 1 hour instead of baking it.

Store the pie covered in the refrigerator for up to 4 days.

The pie can be prepared one day ahead; add the final whipped topping and garnishes shortly before serving.

Freezing is not recommended because thawing can affect the creamy filling texture.

For cleaner slices, chill the pie for the full 3 hours and wipe the knife between cuts.
