Refreshing layered popsicles made with juicy watermelon, a creamy white center, and a vibrant blueberry topping for a fun red, white, and blue frozen treat.

Ingredients

3 cups fresh watermelon, cubed and seeds removed

12 tablespoons honey or sugar (for red layer, optional)

1 tablespoon lime juice

1 cup coconut milk or Greek yogurt

12 tablespoons honey or maple syrup (for white layer)

1 teaspoon vanilla extract

1 cup blueberries

2 tablespoons water

12 tablespoons sugar or honey (for blue layer)

23 drops blue food coloring (optional)

Instructions

  1. Blend the watermelon until smooth, then add lime juice and sweetener if desired and blend again.
  2. Pour the watermelon mixture into popsicle molds, filling each about one-third full. Freeze for 1–2 hours until firm.
  3. In a bowl, mix coconut milk or Greek yogurt with honey and vanilla extract until smooth.
  4. Spoon the white layer over the firm watermelon layer and freeze again for 1–2 hours until set.
  5. Blend blueberries with water and sweetener until smooth. Add food coloring if desired and strain for a smoother texture.
  6. Pour the blueberry mixture over the frozen white layer and insert popsicle sticks.
  7. Freeze for 4–6 hours or until completely solid.
  8. To serve, run molds under warm water briefly and gently remove popsicles.

Notes

Use Greek yogurt for a thicker, tangier white layer.

Skip food coloring for a more natural look, though the blue layer may appear purple.

Other fruits like strawberries or raspberries can replace the watermelon layer.

Store in the freezer for up to 2 weeks in an airtight container.

Let popsicles sit at room temperature briefly if too firm before serving.
