Refreshing layered popsicles made with juicy watermelon, a creamy white center, and a vibrant blueberry topping for a fun red, white, and blue frozen treat.
3 cups fresh watermelon, cubed and seeds removed
1–2 tablespoons honey or sugar (for red layer, optional)
1 tablespoon lime juice
1 cup coconut milk or Greek yogurt
1–2 tablespoons honey or maple syrup (for white layer)
1 teaspoon vanilla extract
1 cup blueberries
2 tablespoons water
1–2 tablespoons sugar or honey (for blue layer)
2–3 drops blue food coloring (optional)
Use Greek yogurt for a thicker, tangier white layer.
Skip food coloring for a more natural look, though the blue layer may appear purple.
Other fruits like strawberries or raspberries can replace the watermelon layer.
Store in the freezer for up to 2 weeks in an airtight container.
Let popsicles sit at room temperature briefly if too firm before serving.
