Peach Melba is a classic summer dessert featuring juicy peaches, creamy vanilla ice cream, and tangy raspberry sauce. Light, fruity, and elegant, it’s a refreshing treat that perfectly balances sweetness and tartness.

Ingredients

4 ripe peaches, peeled and sliced

2 cups vanilla ice cream

1/2 cup raspberry sauce (store-bought or homemade)

1 tbsp fresh lemon juice

1/4 cup slivered almonds (optional, for garnish)

Fresh mint leaves (optional, for garnish)

Instructions

  1. Bring a pot of water to a boil and score an “X” on the bottom of each peach.
  2. Blanch peaches for 30 seconds, then transfer to ice water to cool. Peel, pit, and slice.
  3. Place a scoop of vanilla ice cream in each serving dish.
  4. Drizzle a tablespoon of raspberry sauce over the ice cream.
  5. Arrange peach slices over the ice cream and sauce.
  6. Spoon more raspberry sauce on top for extra flavor.
  7. Garnish with slivered almonds and fresh mint leaves.
  8. Serve immediately or chill briefly before serving.
