This Pecan Upside Down Cake features a rich caramelized pecan topping over a moist, buttery cake. It’s an elegant yet easy dessert that’s perfect for holidays, family gatherings, or anytime you want a comforting homemade treat.

Ingredients

4 tablespoons (1/2 stick) unsalted butter

1/2 cup packed light brown sugar

2 tablespoons maple syrup or honey

1 cup pecan halves

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup sour cream or plain yogurt

1/4 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Melt the butter, brown sugar, and maple syrup over medium heat until smooth and bubbling, about 2 minutes.
  3. Pour the caramel mixture into the prepared pan and arrange the pecan halves evenly over the top.
  4. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  5. In a separate bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  6. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  7. Add half of the dry ingredients, then the sour cream and milk, followed by the remaining dry ingredients. Mix until just combined.
  8. Spread the batter evenly over the pecan layer and smooth the top.
  9. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool for 10 minutes. Run a knife around the edges, invert onto a serving plate while still warm, and remove the parchment paper.

Notes

Substitute walnuts for pecans if desired.

Add 1 teaspoon cinnamon or a pinch of nutmeg for extra warmth.

Dark brown sugar creates a deeper caramel flavor.

Serve warm with whipped cream or vanilla ice cream.
