Ingredients

  • Cooking Base: Cooking spray, ½ medium onion (chopped), 1 clove garlic (minced), 1 tablespoon chili powder
  • Broth & Vegetables: 1½ cups chicken broth, 1 (4-ounce) can chopped green chile peppers, 1 teaspoon ground cumin, 1½ cups canned peeled and diced tomatoes, ½ cup chopped green bell pepper
  • Seafood: ½ cup medium shrimp (peeled and deveined), ½ cup cod fillets (cut into chunks)
  • Finishing Touches: ¼ cup plain yogurt, salt and freshly ground black pepper (to taste), fresh cilantro or parsley (optional, for garnish)

Instructions

  1. Sauté Aromatics: Lightly coat a saucepan with cooking spray and heat over medium-high heat. Add onion and cook until translucent (5 minutes). Stir in garlic and chili powder, cooking for 2 minutes.
  2. Build the Base: Add chicken broth, green chile peppers, cumin, diced tomatoes, and bell pepper. Stir well, bring to a boil, then reduce to low heat. Cover and simmer for 30 minutes.
  3. Add Seafood: Gently add shrimp and cod to the soup. Simmer for 5 minutes until seafood is opaque and fully cooked.
  4. Finish & Serve: Remove from heat and stir in plain yogurt. Season with salt and black pepper. Garnish with fresh cilantro or parsley if desired. Serve hot with crusty bread or over rice
