These Strawberries and Cream Energy Balls are a sweet, creamy, no-bake snack made with wholesome ingredients like cashews, dates, and freeze-dried strawberries. Perfect for meal prep, they are soft, chewy, and naturally sweet.

Ingredients

2 cups raw cashews

6 pitted Medjool dates

3/4 cup unsweetened shredded coconut, divided

1/3 cup creamy cashew butter

3 Tbsp. pure maple syrup

1 Tbsp. hemp seeds or chia seeds

1 tsp. vanilla extract

1/4 tsp. sea salt

1/3 cup freeze-dried strawberries

Instructions

  1. Add cashews to a food processor and blend until finely chopped.
  2. Add dates, 1/4 cup shredded coconut, cashew butter, maple syrup, seeds, vanilla, and salt. Blend until the mixture is well combined and begins to clump.
  3. Add freeze-dried strawberries and blend again until evenly distributed, scraping down sides as needed.
  4. Transfer mixture to a bowl and portion into 24 equal pieces. Roll into balls.
  5. Spread remaining coconut on a plate and roll each ball to coat.
  6. Chill for about 30 minutes until firm, then serve.

Notes

Swap hemp seeds with chia seeds if preferred.

Reduce maple syrup to 2 Tbsp. if omitting coconut.

Roll in crushed freeze-dried strawberries instead of coconut for extra flavor.

Add extra cashew butter if mixture is too dry.

Store in the refrigerator for up to 1 week or freeze for up to 1 month.
