This homemade strawberry gelato is a smooth, creamy frozen dessert packed with fresh strawberry flavor and a hint of bright lemon zest. It is a refreshing make-ahead treat that’s perfect for strawberry season and warm summer days.

Ingredients

1 1/2 cups granulated sugar

2 tablespoons cornstarch

2 cups whole milk

1 1/2 cups heavy whipping cream

4 1/2 cups sliced and hulled strawberries

1 teaspoon lemon zest

Instructions

  1. Combine the granulated sugar and cornstarch in a medium saucepan. Whisk in the whole milk, heavy whipping cream, and lemon zest until well combined.
  2. Bring the mixture to a boil over medium heat, whisking frequently. Reduce the heat to low and simmer for 2-4 minutes, continuing to whisk until the mixture begins to thicken.
  3. Meanwhile, place the strawberries in a food processor and process until completely pureed and smooth.
  4. Remove the gelato base from the heat and stir in the strawberry puree until evenly combined.
  5. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or until thoroughly chilled.
  6. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  7. Transfer the churned gelato to a freezer-safe container, cover, and freeze for at least 3 hours or until firm enough to scoop.

Notes

For extra strawberry texture, reserve a few strawberries, finely chop them, and add them near the end of churning.

Add a little extra lemon zest for a stronger citrus note, or add a small amount of vanilla extract to the cooled base for subtle vanilla flavor.

Raspberries or blackberries can be substituted for strawberries. Consider straining seeded berry purees for a smoother gelato.

Mini chocolate chips or finely chopped chocolate can be folded in near the end of churning.

Frozen strawberries can be used after thawing and draining excess liquid before pureeing.

For an exceptionally smooth texture, strain the strawberry puree to remove some of the seeds.

Store in a tightly covered freezer-safe container for about 1-2 weeks for the best flavor and texture. Press parchment paper or plastic wrap directly against the surface to help prevent ice crystals.

If the gelato is too firm to scoop, let it stand at room temperature for 5-10 minutes before serving.
