Strawberry Kiss Cookies combine the fruity sweetness of strawberry-flavored gelatin with the richness of chocolate, creating a soft, chewy cookie topped with a Hershey’s Kiss for a delightful treat.

Ingredients

1 cup unsalted butter, softened

¾ cup granulated sugar

1 (3 oz) package strawberry-flavored gelatin (like Jell-O)

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract

2 ¼ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

24 Hershey’s Kisses (milk chocolate or dark chocolate), unwrapped

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Unwrap the Hershey’s Kisses and set aside.
  2. Cream Butter and Sugar: Beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Add Strawberry Flavor: Mix in the strawberry-flavored gelatin until fully combined.
  4. Incorporate Wet Ingredients: Beat in the egg, vanilla extract, and almond extract until smooth.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, stirring until combined.
  6. Form the Cookies: Scoop out tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake the Cookies: Bake for 10-12 minutes or until the edges are set and the centers are slightly soft.
  8. Add the Hershey’s Kiss: As soon as the cookies come out of the oven, press a Hershey’s Kiss into the center of each cookie.

Notes

For a lower-sugar version, you can use sugar-free gelatin.

Use different types of Hershey’s Kisses like dark, white, or caramel-filled for variety.

Chill the dough for 30 minutes before baking to prevent spreading.
