This strawberry tiramisu is a creamy no-bake dessert layered with soft ladyfingers, rich mascarpone filling, and sweet juicy strawberries. It is light, refreshing, and perfect for spring or summer gatherings.

Ingredients

500 g fresh strawberries, hulled and sliced

3 tablespoons sugar

1 cup heavy whipping cream

250 g mascarpone cheese, room temperature

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 pack ladyfinger biscuits (savoiardi)

1/2 cup milk or strawberry juice

Optional strawberry powder or crushed freeze-dried strawberries for garnish

Instructions

  1. Place the sliced strawberries in a bowl and sprinkle with sugar. Let them rest for 15-20 minutes until they release juices.
  2. Add the heavy whipping cream to a mixing bowl and beat until soft peaks form.
  3. In a separate bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Gently fold the whipped cream into the mascarpone mixture until fully combined and airy.
  5. Quickly dip each ladyfinger into milk or strawberry juice without soaking them.
  6. Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
  7. Spread a layer of mascarpone cream over the ladyfingers and top with strawberries and some of their juices.
  8. Repeat the layers until all ingredients are used, finishing with a smooth cream layer on top.
  9. Decorate with fresh strawberry slices and optional strawberry powder or crushed freeze-dried strawberries.
  10. Cover and refrigerate for at least 4 hours or overnight before serving.

Notes

Add lemon zest to the mascarpone filling for a brighter citrus flavor.

Use strawberry juice instead of milk for a stronger strawberry flavor.

White chocolate shavings make a delicious addition between layers.

Individual glasses or jars create elegant single-serving desserts.

Store covered in the refrigerator for up to 3 days.

Avoid freezing, as the mascarpone filling and strawberries may become watery after thawing.
