Ingredients

Leftover cake sponge scraps (from a mini cake recipe or a full cake)

Leftover frosting (any flavor of your choice, raspberry frosting works great)

Cakesicle Topping Ingredients

Crushed freeze-dried raspberries (or any topping of your choice)

Instructions

  • Prepare the Cake Mixture:

    • Place the leftover cake sponge into the bowl of an electric mixer. Add the leftover frosting.

    • Mix on low speed with a petal attachment until smooth, ensuring the cake and frosting are well incorporated.

  • Fill the Molds:

    • Fill popsicle molds with the cake mixture, packing it in tightly.

    • Insert popsicle sticks into each mold and freeze the cakesicles for about 1 hour or until firm.

  • Remove the Cakesicles:

    • After freezing, gently squeeze the sides of the mold to release the cakesicles.

    • Place them onto a platter and transfer to the fridge for a few minutes to thaw slightly. This step helps prevent the chocolate ganache from cracking.

  • Dip in Chocolate Ganache:

    • Melt your chocolate ganache (or any other type of chocolate).

    • Dip each cakesicle into the melted chocolate, ensuring it’s fully covered. Use a spatula to scrape off any excess chocolate.

    • Optionally, drizzle chocolate over the cakesicle if you prefer less coating.

  • Add Toppings:

    • Once dipped in chocolate, sprinkle with crushed freeze-dried raspberries or any topping you prefer.

  • Set the Chocolate:

Place the dipped cakesicles onto parchment or wax paper. Let them set at room temperature or refrigerate for about 15 minutes to harden the chocolate.
