1 cup unsalted butter, softened

½ cup granulated sugar

1 cup all-purpose flour

1 cup almond flour (or finely ground almonds)

1 teaspoon vanilla extract

½ teaspoon salt

½ cup fruit preserves or jam (your choice)

Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Beat softened butter and sugar together until light and fluffy.
  3. Mix in vanilla extract and salt until combined.
  4. Gradually stir in all-purpose flour and almond flour until a dough forms.
  5. Cover dough and refrigerate for 30 minutes to firm up.
  6. Scoop tablespoon-sized dough balls and place on the baking sheet, spacing them apart.
