Watermelon Rind Jam is a fantastic way to make use of an often-discarded part of the fruit, turning the tough rind into a flavorful, sweet jam. This recipe combines the fresh taste of watermelon with a variety of aromatic spices, making it a versatile and unique addition to your breakfast table or desserts.

Ingredients

For the Jam:

4 cups watermelon rinds (350g)

1 ¼ cups sugar

1 teaspoon lemon juice

Flavors to use (choose one or more):

4 cloves

Lemon zest

¼ teaspoon vanilla powder (or use vanilla extract)

1 cinnamon stick

Instructions

  1. Prepare the Watermelon Peel: Trim the green skin off the watermelon rind using a sharp knife. Cut the white part of the rind into small 1-inch cubes.
  2. Cook the Watermelon Rinds: In a medium saucepan, add the watermelon rind cubes and cover with water. Bring to a boil over medium heat, then reduce the heat and simmer covered for 25-30 minutes until the rinds are translucent and tender.
  3. Add Flavor: Add sugar, lemon juice, and the flavorings of your choice (cloves, lemon zest, vanilla, or cinnamon stick). Continue cooking for 5-10 minutes, stirring occasionally, until the mixture thickens.
  4. Cool and Jar: Allow the jam to cool to room temperature. Spoon the jam into sterilized jars, seal, and store in a cool, dry place.

Notes

For a refreshing twist, try adding fresh mint leaves to the jam.

If you prefer a more intense spice profile, increase the amount of cinnamon or cloves.

Experiment with adding citrus flavors like orange zest for a more complex flavor.
