These blueberry basil popsicles are a refreshing frozen dessert made with sweet blueberries, fragrant basil, and creamy coconut milk. They are naturally dairy-free, easy to make, and perfect for cooling off on warm days.

Ingredients

1 (14 ounce) can full fat coconut milk

2 1/2 cups blueberries (fresh or frozen)

1 cup basil leaves

1/4 cup honey or agave

Instructions

  1. Add the coconut milk, blueberries, basil, and honey or agave to a blender.
  2. Blend on high speed until the mixture is completely smooth and well combined.
  3. Pour the mixture evenly into 8 popsicle molds.
  4. Insert popsicle sticks if needed and freeze for at least 4 hours, or until completely firm.
  5. Remove the popsicles from the molds and serve immediately.

Notes

Substitute blackberries, strawberries, raspberries, or peaches for the blueberries.

Add a squeeze of fresh lime juice for a brighter citrus flavor.

Use agave instead of honey for a vegan-friendly option.

For extra texture, stir chopped blueberries into the mixture before freezing.

Store popsicles in a freezer-safe airtight container for up to 2 months.

Run molds under warm water for a few seconds to make unmolding easier.
