Homemade Nutter Butters are delicious peanut butter sandwich cookies made with almond flour, oat flour, maple syrup, and vanilla. Featuring lightly crisp edges, tender centers, and a rich, creamy peanut butter filling, these easy six-ingredient cookies are a fun homemade alternative to the classic store-bought treat.

Ingredients

3/4 cup almond flour

1/2 cup oat flour (blend rolled oats to make your own if needed)

1 cup peanut butter (for the cookie dough)

1/2 cup maple syrup

Pinch of sea salt

1 tsp vanilla

1/2 cup peanut butter (for the filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking.
  2. In a large mixing bowl, sift together the almond flour and oat flour until evenly combined and free of large lumps.
  3. Add 1 cup of peanut butter, maple syrup, sea salt, and vanilla to the flour mixture. Stir thoroughly until a soft, cohesive cookie dough forms.
  4. For 6 large sandwich cookies, divide the dough into 24 small balls and press pairs together to form 12 peanut-shaped cookies. For 12 mini sandwiches, divide the dough into 48 smaller balls and press pairs together to form 24 cookies.
  5. Arrange the shaped cookies on the prepared baking sheet, leaving a little space between each cookie.
  6. Use the tines of a fork to gently press a crosshatch pattern into the tops of the cookies. Flatten them slightly while keeping the two rounded sections connected to create the classic peanut shape.
  7. Place the baking sheet in the preheated oven and bake for 10–11 minutes, or until the cookies are set and the edges are lightly golden.
  8. Remove the cookies from the oven and allow them to cool on the baking sheet for several minutes before transferring them to a wire rack to cool completely.
  9. Once the cookies have cooled, spread the remaining 1/2 cup of peanut butter evenly over the flat undersides of half the cookies.
  10. Place the remaining cookies on top of the peanut butter filling, flat sides facing inward. Press gently to create sandwich cookies without breaking them.
  11. Serve the Homemade Nutter Butters immediately or refrigerate briefly to help the peanut butter filling firm up before enjoying.

Notes

Make homemade oat flour by blending rolled oats in a high-powered blender or food processor until finely ground.

Use creamy peanut butter for a smooth, rich sandwich filling or crunchy peanut butter for additional texture.

Natural peanut butter works well, but stir it thoroughly before measuring to evenly distribute the oils.

If the cookie dough feels too sticky to shape, let it rest for a few minutes before rolling it into balls.

For the classic peanut shape, press two small dough balls together and gently flatten them with a fork to create a crosshatch pattern.

Make 6 large sandwich cookies using 12 baked cookies or 12 mini sandwich cookies using 24 smaller baked cookies.

The dough does not require chilling before baking, making this a quick and convenient homemade cookie recipe.

Watch the cookies carefully during the final minutes of baking, as smaller cookies may bake slightly faster.

Allow the cookies to cool completely before adding the peanut butter filling to prevent it from becoming overly soft.

For a firmer filling, refrigerate the assembled sandwich cookies briefly before serving.

Store cooled Homemade Nutter Butters in an airtight container at room temperature for up to 3 days, provided the kitchen is cool.

If the kitchen is warm or the peanut butter filling is particularly soft, refrigerate the assembled cookies in an airtight container for up to 1 week.

For longer storage, freeze the sandwich cookies in a freezer-safe container for up to 3 months, placing parchment paper between layers to prevent sticking.

Thaw frozen cookies at room temperature before serving. Reheating is not necessary.

Use certified gluten-free oat flour and verify that all other ingredients are gluten-free if preparing these cookies for someone avoiding gluten.

These cookies are naturally dairy-free when made with the listed ingredients and are suitable for a vegan diet when using plant-based peanut butter without animal-derived additives.
